Bruschetta can come in a wide range of varieties. Try this version, provided by Jess Porter, Culinary Programs and Food Service Manager at Appleton Farms, especially during tomato season when they are at their freshest.
Tomato Bruschetta
Ingredients
4 ripe tomatoes, diced
2 cloves of garlic, minced
1/4 cup of fresh basil leaves, chopped
2 tablespoons of extra virgin olive oil
Salt to taste
8 slices of crusty bread
Additional olive oil for brushing
Directions
- In a medium bowl, toss the tomatoes, garlic, basil, olive oil, and salt together. Let the mixture sit at room temperature for about 15 minutes to let the flavors mingle.
- Preheat a grill or a grill pan over medium-high heat. Brush both sides of the bread slices with some olive oil and grill them for about 2 minutes per side, or until lightly charred and crisp.(Bonus points if you rub some raw garlic over your toast).
- Spoon some of the tomato mixture over each slice of toast and serve immediately.Enjoy!
