Who doesn’t love fresh tomatoes, pulled right off the plant and eaten under the summer sun? This recipe comes from Powisset Farm, where it was featured in one of Chef Thi’s culinary classes. Tomato Glazed Chicken Wings
Yield 8 servings
Ingredients:
8 pounds chicken wings
½ cup vegetable oil
1-pound tomatoes halved and cut lengthwise
¼ cup balsamic vinegar
¼ cup honey
2 ounces of goat cheese
salt and pepper to taste
Step 1
Preheat oven to 425 degrees. Toss chicken wings with oil, salt, and pepper. Arrange on a sheet tray and bake for 30 minutes or until wings are crispy.
Step 2
Toss tomatoes with honey, balsamic, salt and pepper, and oil. Arrange on a sheet tray and roast until caramelized. Remove from oven and puree with hand blender. Pace mixture on stove until reduced to a thick sauce.
Step 3
Toss chicken wings with sauce and plate the wings. Top with goat cheese and serve immediately.
