Whether it’s for dipping or spreading, a great sauce can perfectly complement any meal. Try this sauce, similar to a pesto, featuring garlic, cheese, herbs and olive oil, provided by Jess Porter, Culinary Programs and Food Service Manager at Appleton Farms.
4 cloves of garlic, peeled
1/2 cup of shredded parmesan cheese
1 teaspoon of salt
1 teaspoon of crushed red pepper flakes
2 bunches of parsley, stems removed
1 tablespoon plus 1 teaspoon of lemon juice
1 cup of olive oil
- In a food processor or a blender, pulse the garlic until finely chopped. Add the parmesan cheese, salt, and red pepper flakes and pulse again until well combined.
- Add the parsley and lemon juice and process until smooth, scraping down the sides as needed.
- With the machine running, slowly drizzle in the olive oil until the sauce is emulsified and creamy.
- Transfer the sauce to a jar or a bowl. Enjoy!
