Jess's Green Sauce

Whether it’s for dipping or spreading, a great sauce can perfectly complement any meal. Try this sauce, similar to a pesto, featuring garlic, cheese, herbs and olive oil, provided by Jess Porter, Culinary Programs and Food Service Manager at Appleton Farms.

Green Sauce


4 cloves of garlic, peeled 

1/2 cup of shredded parmesan cheese 

1 teaspoon of salt 

1 teaspoon of crushed red pepper flakes 

2 bunches of parsley, stems removed 

1 tablespoon plus 1 teaspoon of lemon juice 

1 cup of olive oil 


  1. In a food processor or a blender, pulse the garlic until finely chopped. Add the parmesan cheese, salt, and red pepper flakes and pulse again until well combined.
  2. Add the parsley and lemon juice and process until smooth, scraping down the sides as needed.
  3. With the machine running, slowly drizzle in the olive oil until the sauce is emulsified and creamy.
  4. Transfer the sauce to a jar or a bowl. Enjoy!
