There are so many ways to incorporate healthy greens like broccoli into your cooking. Here’s a great way to add it to stir-fried noodles, in a recipe provided by Chef Thi at Powisset Farm.
Stir-fried Rice Noodles with Broccoli
Yield 8 servings
Ingredients:
1 Tablespoon vegetable oil
24 ounces, fresh rice noodles
4 Tablespoon soy sauce
4 Tbsp dark soy sauce
4 teaspoon sugar
Pinch black pepper
2 tablespoon chili crisps
3 cloves garlic minced
8 ounces broccoli, chopped
Step 1
Combine soy sauce, black soy sauce, sugar, and pepper in a bowl. Set it aside.
Step 2
Boil a pot of water and quickly blanch the fresh noodles and drain. No need to rinse.
Heat a wok on high. Add the garlic, Chinese greens, and stir-fry until the leaves get wilted. (About 15 seconds) Add the noodles and toss to heat.
Step 3
Toss in the soy mixture and stir-fry to combine the ingredients. Serve immediately.
