Shepherd's Pie

Ground beef is a versatile ingredient and the Trustees Grown beef from our 100% grass-fed cows is of the highest quality. This recipe, from Chef Thi at Powisset Farm, is a delicious way to put this great ingredient to use.

Shepherd’s Pie 

Serves 8 

Ingredients: 

4 large potatoes, peeled and quartered
8 Tbsp butter
½ cup milk
2 Tbsp butter cubed
2 Tbsp shredded cheddar
2 Tbsp olive oil
1 medium onion chopped
½ cup chopped celery
½ cup chopped carrot 
1 ½ lbs. ground beef
1 tsp salt
½ tsp pepper
1 cup beef broth
1 tsp Worcestershire sauce
1 Tbsp chopped thyme
½ cup frozen corn
½ cup frozen peas
2 Tbsp flour
½ cup tomato puree 

Preheat oven to 400 degrees 

Step 1 

Heat 2 Tbsp olive oil in a skillet, over medium heat. Add onion, carrot, celery, and cook until soft. 

Step 2 

Add the ground beef to the skillet and season with salt, pepper, and thyme and brown the meat. Add flour to coat the meat mixture. Add Worcestershire, beef broth, tomato puree, peas, corn and cook to reduce the sauce. Season to taste. Cool Beef mixture. 

Step 3 

Place potatoes in a pot of cold salted water. Bring to a boil and cook until tender, about 15-20 minutes.  

Drain potatoes and feed them through a ricer into a large bowl. Mix in butter, milk, and cheddar. Taste to adjust with extra milk and butter if needed. 

Step 4 

In a pie dish, spread a thin layer of potato on the bottom and sides of the pan. Spoon in the beef filling and cover with a layer of potato. Top with dabs of butter. Bake 45 minutes to 1 hour or until the top is crisp and golden.
