Quinoa and Kale Burgers

2 ½ cups quinoa, cooked/ let cool

4 cups kale, chopped small

3 eggs beaten

1 teaspoon salt

½ onion diced

½ cup chives or scallions, chopped

½ c parmesan cheese

2 cloves garlic, minced

½ c breadcrumbs

2 tablespoons olive oil

Combine quinoa, eggs, parmesan, chives and salt.

Heat olive oil in skillet, sweat onions and garlic for 3 minutes. Add kale to skillet, cook until bright green and soft. Add kale mixture to quinoa mix, add breadcrumbs. Form patties ( ½ cup) and fry until golden brown, about 5 minutes each side.
